Healthy Panko Chicken
 
25 minutes and 7 easy ingredients...including the chicken!
 
 
Creamy, crunchy, tangy... what's not to like?
This is a super easy, yummy weeknight meal that my kids love!
 
Ingredients:

Chicken breast (I use organic grass-fed)
3/4 c. Panko bread crumbs
1 1/2 Tbl. Italian Dressing Mix seasoning
1/2 c. Plain organic yogurt
1/2 c. Parmesan or Romano Cheese
Salt and Pepper to taste




 Begin by mixing together the shredded cheese, yogurt and Italian dressing mix.
I shred my cheese from the block instead of buying pre-shredded cheese due to the additives like cellulose (wood pulp) that are in pre-shredded cheeses... and it tastes so much better!
 
 
 
 Lay the chicken breasts flat and spread the top side with the yogurt mixture.
 Sprinkle with some of the panko, then turn them over and repeat with the other sides. Finish with salt and pepper to taste on both sides.
 
Use more panko than listed if needed...it depends on the size of the chicken and how much "crunch" you like!
 
 
Bake in the oven on a foil-lined pan (makes for super easy clean-up) for 20-25 minutes at 450 degrees. Check the middle to be sure its done all the way through!
